Brewed the traditional way, from spontaneous fermentation and aged for 18 months in French oak barrels, imparting intense notes of sour cherry, balsamic vinegar, toast, spice, raisin, and berries. Full, rich palate, balanced by vibrant acidity and flavours of sour lemon zest that lead to a lingering tangy, satisfying finish

Dark brown amber with a thick foam; intense aromas of sour cherry, balsamic vinegar, toast, spice, herb and raisin with complex berry and wine notes; dry, full, rich palate, balanced by vibrant acidity, flavours of sour lemon zest, binned apple, earth, spring cherry and dried fruit on a lingering tangy satisfying finish.

Serving Suggestion

Try with smoked or bbq fish, steamed mussels and seafood, corned beef, cured pork and other salty meat dishes, goat's cheese, blue cheese or strong cheese.
