Description

Cyser is a mead that's been fermented with apple juice rather than water. This one co-ferments apple cider with honey and is from a recipe written in 1980, but lost until only four years ago. It's a complex, floral wine, with sweet-inflected apple and a refreshing acidity. Chill and serve with desserts or full-flavoured cheeses. This will cellar for another 20 years.
