Description

This Junmai Daiginjo Genshu sake was matured alongside & chilled by a massive amount of snow stored in the same insulated room also know as a 'Yukimuro'. This method of storing food at low temperatures, using snow from nature, has been used in our snowy region of Uonuma, Japan for centuries. Kept stable at 3C without electricity (less carbon footprint). Aged for 3 years yields a lot of depth, umami & silky sake.
