The ancestral method, the oldest method for making sparkling wine, differs from the traditional method in that the wine is bottled before the primary fermentation has been completed and no dosage (additional sugar) is used to stimulate secondary fermentation.This example is crafted from 100% Pinot Blanc sourced from mostly sand and loam soils.
