Aperitivo Poli: Candy apple red/orange colour leads to an intriguing nose of orange peel, mulling spice (especially clove and cinnamon), cardamom pod, hickory smoke, potpourri and maraschino cherry. Simultaneously sweetly bitter and bitterly sweet with terrific spice and citrus rind replays. Give this a slight chill and it will both work as a terrific palate refresher at the start of a meal or a digestif at the end. (VINTAGES panel, July 2012)

Asbach Uralt: A German legend since 1892, Asbach Uralt is a terrific brandy that is double distilled and then aged four or five times longer than the prescribed six months. Each batch is aged in French Limousin barriques. A great, full-flavoured brandy that is an exceptional digestif after a meal.

La Malvasia Di Nonino ?e Monovitigno L'Acquavite D'Uva 2003: Uva means grape in Italian. With the ÙE line, Nonino aims to bring forward as much of the essence of the selected variety as possible. In 1984, Benito and Giannola Nonino created a new style of grape spirit by making it not just by using the skins and pulp from a specific variety (as with classic grappa), but the fresh juice too. As a result, the aromatics and flavours of the source grape are maintained in the finished distillate. Enjoy this aromatic version from Malvasia as an after-dinner contemplation sip.

P?pidoux Fine Calvados: Calvados (apple brandy) is the classic drink of Normandy. Over 200 different varieties of apples, many completely unique to the region, are permitted in its production. Some producers use as many as 100 different varieties in pursuit of the flavour profile they prefer. It is not overstating things to say that though apple brandy is made elsewhere in the world, no others taste quite like Normandy's. Classically enjoyed as a digestif after a big meal, it is also exceptional as a contemplation libation from a snifter, just as you'd enjoy a cognac.

Sazerac Legendre Herbsaint: Herbsaint was created in 1934 in New Orleans by J. Marion Legendre and Reginald Parke. They wanted to develop an absinthe substitute since the use of wormwood (a prime ingredient in original absinthe) had been banned. Herbsaint was acquired by Sazerac in 1949. They changed the recipe in the 1970s, but returned to the original in 2009 when an enthusiast gave them a bottle of the original blend. This has always been an important ingredient in The Sazerac cocktail.
