Tasting Note: Though the style is most obviously associated with Champagne, where the process was refined, Limoux has a firm claim on being the first region to develop sparkling wines. Labelled méthode ancestrale, these wines are quite rare. This one was crafted in the traditional method and is floral with toast and bread notes with lemon, apple and pear. Bright and zesty with a crisp and vibrant acidity plus a spirited mousse. (Vintages panel, Nov. 2016)
