Tasting Note: Making an ice cider is no mean feat. It requires that the apples freeze, exposed to temperatures that can reach -40 C, before the highly concentrated juice can be extracted and fermented. To create one 375 mL bottle can take more than 50 apples. The fresh, complex pine, apple, pear and sweet cider notes found here earned the Félibre Givré a Gold Medal at the 2015 All Canadian Wine Championships. (Vintages panel, July 2015)
