Tasting Note: Nose: Not, perhaps the most wide-ranging of noses as far as different aroma traits are concerned. But it does what it sets out to do with something akin to perfection. Caramels simply don't come this intense yet pitch-perfect. The corn, oak, toasty sugars and all else to be found all seems wrapped one way or another in caramelized form with varying levels of honey and roast at work. So the feeling of age, great age. Yet as though preserved in caramel... extraordinary and beyond beautiful. Taste: No surprises then that the delivery is firm to the point of crunchiness. And, again, it is concentrated caramel sweetened with honey, Manuka and ulmo, ensuring that the age doesn't take a turn for the sinister. It needs spices to balance the mouth experience away from deliciously sweet... and it arrives on schedule and with purpose; Finish: long unravelling of the many element and personalities which make up the caramel, especially the corn, with some late burnt toast and marmalade at the very Score - 97.
